Well in demo there are a lot of real time effects going on. In games they try to make the game as fast as possible with so effects so little as possible. So they use a lot prerendered stuff. Nothing wrong in that, because is all games would be as taxing as fire-strike is, only the most rich one could play the games! In demo the graphics is more realistic (in physical aspect) and it has been planned to be as taxing as possible and to feature as many effects as the system allows. So very different beasts! More realistic graphic does not mean better looking. It can be, but that is not the point of hardware demos.
You haven't played Watch Dogs I'm guessing? To play it with everything maxed out you need either a Titan or GTX 780 ti. My previous GTX 680 could only play it on High @ 1200p and stay over 30fps. MY current GTX 780 ti runs everything on ultra + TXAA 4x @ 1200p and 45-60fps.
